2 to 3 medium-size ripe tomatoes
1 lb. Fresh Mozzarella cheese, sliced
Extra virgin olive oil
Salt and freshly ground black pepper
A handful or more of fresh basil leaves
Splash of balsamic vinegar (optional)
Slice tomatoes and mozzarella into ¼ inch slices. Arrange on a platter, alternating a slice of tomato, cheese and a basil leaf until platter is full. Season well with salt and pepper. Drizzle with olive oil. Garnish with fresh chopped basil. You can also drizzle with a little balsamic vinegar if you like.
