Orange Salad Bowls
5 large oranges
3 teaspoons orange zest
1/4 cup fresh-squeezed orange juice
2 tablespoons balsamic vinegar
2 tablespoons honey
1/3 cup olive oil or canola
Salt and black pepper
8 to 10 cups spring mix lettuce
1 can mandarin oranges drained (optional)
1/4 cup shredded Parmesan cheese
Slice the top off of 4 oranges as close to the top as possible. Using a sharp knife, run knife blade carefully around inside edge of each of the 4 oranges, far enough down to loosen as much of the orange as possible, but not so far down as to cut a hole in the bottom of the orange. Using spoon, scoop out the orange pulp, scraping the inside of the orange as clean as possible, again without ripping or tearing the orange. Zest and squeeze juice from the one remaining orange. In a jar with a tight-fitting lid add orange zest, fresh orange juice, balsamic vinegar, honey, oil, and a pinch of salt and pepper. Shake well until dressing starts to thicken a bit. To serve, put the spring mix in a large bowl. Toss with enough of the dressing to coat the spinach. Either cut the insides of some of orange flesh that was removed into small pieces or instead you can use the canned mandarin oranges. Toss with the salad. Fill orange bowls with salad. Sprinkle each with a little cheese.
These are really cute for a Halloween dinner or party. Just use a sharp knife to cut a Jack-O-Lantern face in each orange cup.
