Layered Salad
Ingredients:
2 1/2 cups mayonnaise (you can use lite)
2 tablespoons sugar
Salt and pepper to taste
1 head lettuce, cut up
1 cup diced celery
2 cups frozen peas, or thawed fresh peas
4 scallions, chopped
1 cup diced tomatoes or red peppers
4-5 eggs hard boiled eggs, chopped
2 cups shredded cheddar cheese
1/2 pound bacon, cooked and crumbled
Directions:
Mix together mayo and sugar and season with a little salt and pepper. In a 13 x 9 pan or a pretty glass bowl layer chopped lettuce. Then layer celery, peas, onions, tomatoes or red peppers and eggs. Carefully spread mayo mixture over the top. Top with bacon and cheese. Cover tightly and chill for a least 4 hrs.
