Layered Italian Salad

Layered Italian SaladIngredients:
1 ½ cups mayonnaise
1 ½ cups sour cream
1 packet (.75 ounces) Dry Italian dressing mix
6 to 8 cups chopped romaine lettuce
Half a red onion, thinly sliced
2 cans (15 ounces each) garbanzo or cannellini beans, rinsed and drained
2 cups diced or sliced cucumber
2 cups cherry or grape tomatoes, halved
1 can (6 ounces) sliced black olives
2 cups cubed mozzarella cheese
2 cups cubed salami or pepperoni
Fresh basil (optional)

In a bowl whisk together first 3 ingredients to make dressing. In a clear glass bowl or trifle dish layer the next 8 ingredients in that order. Carefully spread dressing over the top like you would frost a cake. Cover loosely with plastic wrap and refrigerate until ready to serve. Uncover before serving and you can decorate the top with fresh basil or a few extra tomatoes or olives if you like. Salad can made ahead and refrigerated for up to 8 hours before serving.
