Chuck Wagon Skillet

1 1/2 pounds ground chuck
1 green bell pepper, diced (optional)
1 cup finely diced onion
2 teaspoons garlic salt
1/2 teaspoon black pepper
2 cups beef stock
1 pkg (16 ounces) wagon wheel pasta
2 cups barbecue sauce
2 cups water
2 cups shredded Mexican blend or cheddar cheese
2 tablespoons chopped scallions (optional)

In a large skillet with a tight fitting lid brown beef and onion for about 5 minutes. Stir in green pepper. Cook until beef is crumbly and no longer pink. Drain any grease. Season beef mixture with garlic salt and pepper. Stir in stock, water, pasta, and barbecue sauce. Cover and simmer on low for 10 to 15 minutes or until pasta is tender. Uncover and sprinkle with cheese. Cover again for a minute or two to melt cheese. Sprinkle scallions on the top.
