Strawberry Tarts

3 cups flour
1-1/4 cups softened butter
1 (8oz.) pkg. cream cheese, softened
3/4 cup sugar
Pinch salt
1-1/2 tablespoons cornstarch
1 cup water
A drop or two of red food coloring (optional)
1/2 teaspoon vanilla
1 quart strawberries, sliced
Fresh whipped cream (optional)

Combine flour, cream cheese, and butter until it forms into a smooth dough. Separate into 36 equal pieces. Press into and up sides of greased mini-muffin tin. Bake in a preheated 350 degree oven for about 25 minutes or until golden. For filling, mix sugar, cornstarch, and salt in a small saucepan. Stir in water. For more intense red color, you can add a drop or two of red food coloring. Cook, stirring constantly for 6 to 8 min. or until clear and thick. Add berries and vanilla. Let cool. Spoon filling into cooled baked shells. Garnish with whipped cream if desired.
