Rhubarb Cake

Ingredients:
1/2 cup softened butter
1 1/2 cups sugar
1 egg
1 cup sour milk (take a 1 cup measuring cup, take 1 tbsp vinegar and put into 1 cup measuring cup and add milk to the vineagar to make 1 cup)
1 teaspoon vanilla
1 teaspoon baking soda
1/2 teaspoon salt
2 cups flour
2 cups chopped rhubarb

Topping-
1/2 cup sugar
1 teaspoon cinnamon

Directions:
Mix with blender the butter, sugar, and egg. Add the vanilla, baking soda, salt. Blend together. Then add the flour and the milk. Once those ingredients are blended together, fold in the rhubarb.

Put into a greased 9X13 cake pan. Mix the sugar and cinnamon topping together and sprinkle over the cake batter. Bake at 350 degrees for about 45 min. Start checking at about 30 minutes with a toothpick. Could even take up to 50 min depending on your oven.

Tried to enter this for the contest on Fox 11 but I didnt realize you could only submit one. This is too good of a recipe not to share and I hope you enjoy!

    This is an awesome recipe. I have made it at least 10 times this spring. I use brown sugar in the cake and 3 cups of rhubarb. It is nice and moist. Even better when topped with a dollop of whipped cream!!!!
