Peanut Butter Chocolate Chip Cookies
2 1/2 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups peanut butter
1 cup butter, room temperature
1 1/2 cups packed brown sugar
2/3 cups sugar
1 tablespoon light corn syrup
1 1/2 tablespoon vanilla extract
12 ounces semisweet chocolate
3/4 cups peanuts, slightly chopped (optional)
Preheat oven to 350 degrees. In a medium bowl, sift together the flour, baking soda, and salt. Set aside.
In a large mixing bowl, on medium speed, beat together the peanut butter, butter, brown sugar, and sugar until very well blended and fluffy.
Add eggs, corn syrup, and vanilla extract. Beat until well blended. Beat in flour mixture until well combined. Stir in chocolate chips and peanuts.
Scoop cookie dough and place on baking sheet, spacing about 2 inches apart.
Bake cookies in upper third of oven for 13 to 15 minutes or until lightly browned.
