Fresh Strawberry Popsicles
3 to 4 cups strawberries, hulled and washed
1/4 to 1/3 cup sugar
1/3 to 1/2 cup water
Place the strawberries in blender with 1/4 cup sugar and 1/3 cup water. Blend until pureed. If you like, you can leave some chunks of berries remaining. If mixture is a bit too thick add a little more water. If it’s not sweet enough add a bit more sugar.
Pour mixture into popsicles molds or paper cups. If using paper cups, cover each cup with a small piece of foil and then insert popsicle sticks or wooden spoons. Freeze pops until solid, at least 8 hours. This makes 6 to 8 pops depending on the size.
You can use this same recipe with other berries and fruit too! You can also make these without sugar and in place of the water use apple, pineapple, or orange juice.
