Meatball Sub Casserole
1 (18 ounce) package frozen cooked Italian meatballs, thawed
1 (16 ounce) can Grands refrigerated buttermilk biscuits
1 jar (28 ounces) jar spaghetti sauce
2 cups shredded mozzarella cheese
2 teaspoons dried or 1 tablespoon fresh chopped Italian parsley (optional)
Preheat oven to 375 degrees. Spray a 9 x 13 inch glass dish with cooking spray. Separate dough into 8 biscuits. Cut each biscuit into 6 pieces. Place biscuit dough into baking dish. Pour spaghetti sauce and meatball on top. Toss gently to coat so that the sauce covers meatballs and the dough and spread out in pan a bit. Bake about 30 minutes or until edges are deep golden brown and biscuit pieces are no longer doughy. Sprinkle with cheese and bake an additional 2 to 5 minutes or until cheese is melted. Sprinkle parsley on top if you like.
