Tomato Basil Quiche

Ingredients:
1- 9 inch pie crust unbaked
4 eggs
1 1/2 cups heavy cream
2 cloves garlic, minced
1 1/2 cups shredded Parmesan cheese
1/4 cup chopped fresh basil, plus extra for garnish
1 to 2 medium ripe tomatoes, sliced thinly
Pinch of salt and pepper

Directions:
Preheat oven to 375 degrees. Place pie crust in pie pan, and pre-bake it for 5 to 8 minutes. Whisk eggs and cream together. Season with a little salt and pepper. Add basil, garlic and cheese to the egg mixture. Carefully pour egg mixture into crust. Place the sliced tomatoes on top. Bake for 35 to 50 minutes or until cooked through. Let rest at least 15 minutes before slicing. Decorate the top with fresh basil.
