Tater Tot Breakfast Casserole

1 pound bacon, cooked and chopped or crumbled
1 bag (32 ounces) frozen tater tots
1 (1-oz) package dry Ranch Dressing Mix
2 to 3 cups shredded cheddar cheese
12 eggs
2 cups milk
3 to 4 green onions, chopped (optional)

Preheat oven to 350 degrees. Spray a 9 x13 inch casserole dish with cooking spray. Place tots in the bottom of the dish. Whisk together eggs, Ranch mix and milk. Pour over tater tots. Top with cheese and bacon.

Cover with foil and refrigerate at this point, if baking later. You can make night before and bake in the morning. Bake covered with foil for 40 minutes. Uncover and bake another 10 to 20 minutes or until eggs are set. Top with green onions if you like before serving.
