Ingredients:
1 9-inch unbaked pie crust in pan
1/2 pound or 2 cups diced or shredded corned beef
1 cup sauerkraut, squeezed and drained
1 1/2 cups shredded Swiss cheese
2 eggs, beaten
1 cup heavy cream
2 tablespoons finely chopped onion
1/2 teaspoon dry mustard

Directions:
Preheat oven to 375 degrees. Fill pie shell with corned beef. Top with sauerkraut and cheese. Beat together eggs, cream, onion and dry mustard. Pour into pie shell and bake for 45 to 60 minutes, or until eggs are set. Let stand 5 to 10 minutes before slicing.
