Pumpkin Pecan Oatmeal

1 1/2 cups quick cooking oats
1 teaspoon pumpkin pie spice
1 teaspoon cinnamon
1/4 teaspoon salt
1 1/2 cups milk
3/4 cup water
3/4 cup canned pumpkin
1/4 cup brown sugar
1 teaspoon vanilla
2 tablespoons butter, melted
1/4 cup pecans, roughly chopped

Preheat oven to 375. Spray a small casserole dish with cooking spray.

In a bowl, combine all but the nuts. Stir well. Bake for 25 to 30 minutes. Sprinkle nuts on top and bake another 5 to 10 minutes or until golden and set in the center.

Serve warm with oatmeal toppings like, milk, maple syrup or brown sugar.
