Cherry Almond French Toast

Cherry Almond French Toast

Ingredients
 

  • 6 eggs
  • 1/2 cup milk
  • 1/2 cup heavy cream
  • 2 tsp vanilla extract
  • 8 thick slices white or French bread
  • A few tbsp butter
  • 1/4 to 1/2 cup sliced almonds - toasted

Cream Cheese Topping:

  • 1 block (8 ounces) softened cream cheese
  • 1 tsp almond extract
  • 3 tbsp milk
  • 3 tbsp powdered sugar

Cherry Sauce:

  • 4 cups frozen or fresh pitted cherries
  • 1 cup orange juice
  • 1/2 cup sugar
  • 1/4 tsp cinnamon
  • 1 tsp almond extract
  • 1/2 cup cherry juice or cranberry cherry juice
  • 1 tbsp corn starch
  • 3 tbsp cold water

Instructions
 

  • Whisk together first 4 ingredients.
  • Dip bread in egg mixture.
  • Heat a little butter in a non-stick skillet or on a griddle.
  • Cook each piece until golden brown and flip over and cook a few more minutes.
  • To serve, place a slice or two of French toast on plate, spoon some of the cream cheese mixture over top.
  • Then spoon warm cherry sauce on top and sprinkle with almonds.

Cream Cheese Topping:

  • Beat together first 4 ingredients until smooth.
  • Can be make up to a few days ahead, just refrigerate.
  • Remove from fridge at least 15 to 30 minutes before serving.

Cherry Sauce:

  • Place first 6 ingredients in sauce pan, bring to boil.
  • Mix corn starch and water in small bowl and add to cherry mixture.
  • Continue cooking, stirring until thickened.
  • Can be made up to a day ahead and refrigerated.
  • Just warm before serving.
