Applesauce Streusel Muffins

1/2 cup butter, softened
1 cup sugar
1 cup applesauce
2 cups all-purpose flour
1 egg, beaten
1 teaspoon baking soda
1 1/2 teaspoons cinnamon
1/4 teaspoon salt
1 apple, peeled and diced

Streusel Topping:
1/4 cup butter, softened
1/2 cup flour
1/2 cup quick-cooking oats
1/4 cup brown sugar
1 teaspoon cinnamon

Combine butter, sugar, applesauce and egg in a mixing bowl and beat on low speed until combined. In a separate bowl, combine flour, baking soda, cinnamon, and salt. Mix dry mixture into butter mixture just until moistened. Stir in apples. Fill paper-lined muffin cups 3/4 full. Sprinkle each with some of the streusel topping. Bake in a pre-heated 350 degree oven for 20 to 25 minutes.

Topping Directions:
Blend all ingredients with a pastry blender until crumbly.
