Apple Cinnamon Coffee Cake

1 3/4 cup sugar, divided
6 ounces cream cheese, softened
1/2 cup butter, softened
1 teaspoon vanilla
2 eggs
1 1/2 cups flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 1/2 tablespoons cinnamon
3 cups chopped peeled apples

Preheat oven to 350 degrees. Use a mixer to beat 1 1/2 cups sugar with cream cheese, butter, and vanilla. Add the eggs one at a time and mix in. In another bowl, whisk together flour, baking powder, and salt. Add to cream cheese mixture and beat low just until blended. In a separate bowl combine the remaining 1/4 cup sugar and cinnamon. Sprinkle 2 teaspoons of the mixture over the apples. Add apples to batter. Spread batter into 8 inch springform or round pan sprayed with cooking spray. Sprinkle remaining cinnamon sugar on top. Bake 55 to 60 minutes or until a toothpick inserted comes out clean.

You can also bake in a 8 inch square pan.
