Mom’s Fake Raspberry Jam
4 cups ground green tomatoes (done in blender)
3 cups sugar
1 large (6oz) pkg. raspberry jello
Grind green tomatoes in blender until you have 4 cups. Add sugar and cook for 10 minutes until transparent in color. Add jello and boil for 1 more minute. Pour into sterile jars and seal with sterilized lids. Makes about 4 pints.
I use the “sure simmer” on my microwave. I simmer for the first 10 minutes and again for one minute after adding jello. I also process in the hot water bath and they seal every time.
***I do not tell people it is green tomato jam until they try it, they can’t believe it! MAKE SURE THEY ARE NOT ALLERGIC TO TOMATOES! Did not even think of that until I gave it to someone and they could not figure out why they broke out in a rash.
