When Life Gives You Lemons… Tweet 19th March 201319/03/13 Amy's Blog Amy Hanten 1 Comment Okay, so I can’t remember a longer winter! Guess maybe we’ve been spoiled a bit the last few years! So, now that it’s officially spring, even though it sure doesn’t feel like it here in Wisconsin, I’m in the mood for some fun, lighter food! You too? A bowl full of lemons on the kitchen island just seems to brighten things up despite the blanket of snow I’m looking at out my window. You know what they say, when life give you lemons… So, I say let’s think spring and use them! I was on WGN-TV in Chicago this week making some lemony fresh recipes. My Best Ever Lemon Chicken really is the best! I can’t wait ’til it warms up a bit so I can make it on the grill! I always make a few extra pieces of chicken or add a few boneless chicken breasts to this recipe. That way I can turn the leftovers into a great big batch of my Lemon Chicken Pasta Salad. It’s perfect to pack in lunches all week! Speaking of noodles, my Creamy Lemon Pasta is a really fun spring side dish. Something a little different then potatoes and my kiddos love it! For dessert, you can’t go wrong with my Lemon Poppy Seed Cake. It’s so moist and pretty and super simple to make! It’s also perfect for bake sales and house warming gifts. I use the same recipe and bake it up in mini loaf pans. Everybody loves it! No time to bake. I hear ya! Just pick up an angel food cake, lemon pudding, Cool Whip, and blueberries and start layering.
