Got Zucchini? Tweet 19th September 201319/09/13 Amy's Blog Amy Hanten 0 Comments It’s that time of year! I think the farmers markets here in Wisconsin are really at their best right now. Seems everything was a bit late this season but now it’s all here! Gorgeous sweet corn, cucumbers, big beautiful tomatoes and lots and lots of zucchini. In fact I’ve got zucchini coming out of my ears! You too? People keeping giving it to me and actually I’m happy to take it off their hands! When I first started dating my hubby, Bob, I remember making him dinner. I was so excited and so was he! That is until I told him we were having zucchini as part of the meal. He said, “I don’t do zucchini.” I thought hey, he hasn’t had mine. He tried it and he liked it. To this day it’s one of his favorite veggies. I think the key to making good zucchini is not over cooking it! If you do it gets mushy and that’s no fun. I put together a bunch of really delicious and easy, breezy zucchini recipes I think you’ll dig! From my super quick Skillet Shrimp and Couscous dinner, to my Zucchini Ribbon Salad, to Tortellini Soup with Zucchini and Sausage. So good! Forget, French fries, instead make it a little healthier and make my Oven Fried Zucchini. My kiddos love to dip them in Ranch dressing or marinara sauce. Don’t forget dessert. Seriously! My Zucchini Cupcakes with Cream Cheese Frosting are to die for. Moist and delish! So, get a little zucchini crazy! The season will be over before you know it so you might as well go wild!
