Cooking Up a Great St. Paddy’s Day! Tweet 14th March 201314/03/13 Amy's Blog Amy Hanten 1 Comment I love this time of year! Everybody is just a little bit Irish! In my house, I’d be in the dog house if I didn’t do corned beef and cabbage on St. Patrick’s Day! My clan loves it! I have a couple secret ways to make it corned beef! The easiest is in the slow cooker with beer and veggies. Or, if I’m going to be home during the day, I roast it in the oven. Either way you do it, it turns out super tender and delicious! I always do a nice big corned beef or maybe even two, because we love the leftovers! I was on TV in Milwaukee this week getting my green on. They went crazy over my Reuben Soup with corned beef and lots of Swiss cheese. It’s like a Reuben sandwich in a bowl! And, you can’t forget my Beer Bread to go with it! It’s so easy! Just a few ingredients and it makes the house smell so good! I also used leftover corned beef to make my baked Hot Reuben Dip. Perfect for the big game or movie night! Leftover corned beef freezes really well too! So, dice it up and throw it in a freezer bag and then when you’re craving corned beef down the road, it’s right there! And, you can make my Reuben Eggrolls and my Stuffed Reuben Sandwich, which are always a hit! For a quick last minute St. Paddy’s dessert, you can’t go wrong with my Fudgy Mint Cupcakes! Talk about easy! I just jazz up boxed brownie mix for the cupcakes and top them with a pretty mint green frosting and an Andes mint on top! My fave!
