Crust
1 ¾ cups flour
¼ cup butter, chilled, diced
2 T white sugar
¼ t vanilla extract
1/8 t lemon extract
1 egg, lightly beaten
Filling
2 cups blueberries
¼ cup sugar
¼ cup maple syrup
5 T water
¼ t cinnamon
¼ t nutmeg
Topping
½ cup butter, melted
½ cup brown sugar
1 ½ flour
Crust
Preheat Oven to 375 degrees.
Spray 8×8 baking pan with cooking spray.
Combine flour and sugar. Cut in butter with pastry blender. Add egg, vanilla and lemon, mix. Press into the bottom of greased 8×8 pan.
Filling
In a small saucepan, combine all ingredients and cook on low, stirring occasionally until blueberries start to break. Let cool slightly and spoon over crust.
Topping
Melt butter, mix in brown sugar and flour. Crumble mixture over blueberries.
Bake at 375 degrees for 30-35 minutes. Remove, let cool slightly. Serve warm with vanilla ice cream.

This was an excellent recipe of the week! I tried the recipe out on Sunday evening after a family dinner with my in-laws. It was a huge hit! Warm saucy berries, nice crust and creamy ice cream – it was simply delicious. This recipe will be regular rotation!
