Summer wouldn’t be Summer if I didn’t make chicken salad!. In wraps, on a croissant or French bread, it’s all good!. I was on Fox 6 news in Milwaukee this week and decided to celebrate cherry season and show everybody how to make my Door County Cherry Chicken Salad. Well, let’s just say, it was a hit! Dried Door County cherries, toasted pecans, chopped celery, diced chicken and you’ve got the perfect Summer salad! I have a few different recipes for chicken salad in my cookbook but, this one reminds me of Summer at the cottage. I always make it there and we eat it all week. You know the ladies LOVE chicken salad! To be honest, my hubby Bob, LOVES chicken salad too! Feel free to cut back on the mayo but no matter what, make this! I promise you, it will be a hit!

I made it for a pot-luck, 2 wks. ago and it was a hit! I put it in little cream puff shells and it made a great presentation. I had it in mind from last year to make, sometime. Thanks for the recipe!
