Southwest Chicken Sandwiches

Southwest Chicken SandwichesIngredients:
4 boneless chicken breasts, pounded slightly thin
2 tablespoons lime juice
2 teaspoons chili powder
3 tablespoons olive oil
Salt and pepper
4 slices pepper jack or cheddar cheese
4 split and toasted buns
4 slices fresh tomato
8 slices avocado
1/2 cup prepared ranch dressing
2 tablespoons chunky salsa
1 tablespoon fresh chopped cilantro

Directions:
Whisk together lime juice, chili powder and oil. Place chicken breasts in a glass dish or re-sealable bag. Pour marinade over chicken and cover or seal bag and refrigerate up to 8 hours. In a small bowl, mix together ranch, salsa and cilantro. Refrigerate until ready to serve. Remove chicken from marinade. Season with a little salt and pepper. Grill or fry chicken breasts until chicken is cooked through. Top each piece of chicken with a slice of cheese and cover to melt. Assemble sandwiches on buns with chicken, tomato, avocado and a few tablespoons of the salsa/ranch sauce.
