Way Too Easy White Chicken Chili

Cook Time 5 minutes
Servings 8

Ingredients
 

  • 48 ounces great northern beans - drained and rinsed
  • 3 cups shredded or diced cook chicken breast
  • 4 cups chicken stock
  • 16 ounces green salsa
  • 2 teaspoons cumin
  • Your favorite chili fixin’s

Instructions
 

  • Dump it all in a large pot.
  • Simmer 5 to 10 minutes, stirring often.
  • Serve in bowls with your favorite chili fixin’s on top.
  • Great served with my Corn Bread and Honey Butter!

Notes

I love this with green salsa but you can also you a thick and chunky red salsa.   This is a great way to use leftover chicken.  You can use dark or white meat or both.   Too make it even easier pick up a rotisserie chicken.   You can use 1 big 48 ounce jar of cooked great northern beans or 3 cans that are 15 ounces each.

  6. I make a different soup and chili almost every week. Have tried most of your soups and have not been disappointed, keep them coming.
    Do you or your viewers have a recipe for potatoe soup? I had one and lost it. Could do miss that one. I remember cut up potatoes and boil them save some of the water and add milk and bacon and spices, not sure on proportions on all

  7. As an unreconstructed bachelor whose goal is always the least prep time but it has to be there in the taste department. Also, if the nutritional aspect should happen to follow, that’s certainly a plus. This dish more than meets all those standars It’s unbelievably easy and good, and you will not be dissappointed if you try it as I did for the football playoffs and this recipe fared better than the Packers by far!!

  8. This is actually a weight watchers recipe I have from years ago, except it didn’t include cumin. Sounds wonderful on a day like today!
