Slow Cooker Lentil Soup

Ingredients:
8 to 12 cups vegetable or chicken stock
3 carrots, chopped
3 ribs of celery, chopped
1 onion, chopped
3 cloves garlic, chopped
1 can (15 ounces) diced tomatoes with juice
2 potatoes, peeled and diced (optional)
2 cups lentils, rinsed
3 teaspoons fresh or 1 teaspoon dried thyme
1 tablespoon balsamic vinegar
2 teaspoons salt
1 teaspoon ground pepper
1/4 cup chopped Italian parsley

Directions:
Put 8 cups of stock and the next 7 ingredients the slow cooker. Cook on low for 8 hours or on high for 4 to 5 hours. If the soup looks too thick, add 1 to 4 cups more stock depending on how thick you want it. Stir in the vinegar, thyme, and salt and pepper. Heat until warm. Serve in bowls with fresh chopped parsley on top.
