Slow Cooker Cheesy Broccoli Soup

Slow Cooker Cheesy Broccoli Soup

Ingredients
 

  • 1 box (2 pounds) Velveeta - cut in cubes
  • 1/2 cup onion, finely diced - optional
  • 2 cans (10 1/2 ounces) condensed cream of celery soup
  • 2 boxes (10 ounces) frozen chopped broccoli
  • 1 cup chicken stock
  • 1/2 teaspoon black pepper
  • 3 to 4 cups half and half
  • Cooking spray

Instructions
 

  • Spray crock pot with cooking spray or use a crock pot liner.
  • Mix 3 cups milk or half and half and the remaining ingredients in slow cooker.
  • Heat for about 2 to 3 hours on LOW, or until broccoli is tender.
  • Stir every once in a while.
  • If soup is too thick, add more half and half or some milk.
  • Great served with extra shredded cheese and crackers or croutons on top!

Notes

    I was wondering if the chessy broccoli soup can be frozen? I want to make it for my parents and they won’t be able to eat it right away.

      When I make this great soup I always put it into covered soup mugs and freeze it. I put it in the refrigerator the nite before I want to eat it. The next day I microwave it for 3 min.

    After seeing you on Fox 6 making this recipe, I located your website and found the recipe. WOW! This is a great recipe and it was so simple! My family loved it! Though next time I will cut the ingredients in half since there are only the 3 of us at home and the recipe makes enough for 10 – 12 servings (approximately).

    Made the Hungarian Sausage soup for lunch today and it was great. It was very simple to make with lots of flavor. The next time I make it I might add a small can of drained saurkraut and my son said I should put bacon in it.
