Mexican Meatball Soup

Mexican Meatball Soup

Ingredients
 

  • 1 package (16 ounces) heat-and-serve frozen beef meatballs - thawed
  • 1 can (15 ounces) black beans - drained
  • 2 cups corn
  • 1 cup chunky salsa
  • 1 can (4 ounces) diced green chilies
  • 8 cups beef stock
  • 1/4 cup chopped cilantro
  • sour cream - optional

Instructions
 

  • In a big soup pan add beef stock, beans, corn, salsa, green chilies and meatballs.
  • Bring to a boil and simmer 5 minutes.
  • Serve in bowls topped with cilantro and a little sour cream.

    Can’t wait to try this. I have turkey meatbslls and Gardein’s Classic Meatless Meatballs. Either would be yummy.

  3. This was so easy to make and satisfying on a cold day. I will make this again.

  4. Surprisingly, I had all the ingredients so I made it one late afternoon. It is very good and satisfying. I used IKEA meatballs , Pace picante sauce-original hot, and beef broth, as that’s what I had. It is a great soup for unexpected meals and most ingredients are in the pantry or freezer. I had only 4 cups of broth so I made half the recipe except for the canned items. So twice the beans and chilies. It worked well. Nice and filling!
