Waldorf Salad

Ingredients:
3 sweet, crunchy apples, cored and cut into cubes
2 teaspoons lemon juice
1 cup finely diced celery
3/4 cup chopped and toasted walnuts
6 tablespoons mayonnaise
Salt and pepper
Leaf lettuce (optional)

Directions:
In a bowl whisk together mayonnaise, lemon juice, and a little salt and pepper. Add apples, celery and nuts. Cover and refrigerate until ready to serve.

Notes:
Best if served within 24 hours of making. You can lighten it up by using light mayo or plain Greek Yogurt. If using yogurt you may want to add a bit of honey to sweeten up the dressing a bit.
