Ingredients
 

  • 2 1/2 cups mayonnaise - you can use lite
  • 2 tbsp sugar
  • Salt and pepper to taste
  • 1 head lettuce - cut up
  • 1 cup diced celery
  • 2 cups frozen peas, or thawed fresh peas
  • 4 scallions - chopped
  • 1 cup diced tomatoes or red peppers
  • 4-5 eggs hard boiled eggs - chopped
  • 2 cups shredded cheddar cheese
  • 1/2 pound bacon - cooked and crumbled

Instructions
 

  • Mix together mayo and sugar and season with a little salt and pepper.
  • In a 13 x 9 pan or a pretty glass bowl layer chopped lettuce.
  • Then layer celery, peas, onions, tomatoes or red peppers and eggs.
  • Carefully spread mayo mixture over the top.
  • Top with bacon and cheese.
  • Cover tightly and chill for a least 4 hrs.
