Chipotle Roasted Sweet Potatoes

Ingredients:
2 to 3 large sweet potatoes, washed and dried
1 tablespoon chili powder
2 cloves garlic, minced
2 to 3 tablespoons olive oil
Salt and pepper
1 to 2 chipotle peppers in adobe sauce, chopped (just depends on spicy you want them)

Directions:
Cut the sweet potatoes into bite-sized pieces and place in a casserole dish or roasting pan. Add the chili powder, garlic, salt and pepper chipotle peppers and olive oil. Stir to coat. Roast the potatoes in a preheated 400 degree oven for about 25 to 40 minutes, or until potatoes are cooked and browned a bit.

  1. First time I’ve tried the chipotle chills in adobe! Very spicy, but very delicious! Definitely a keeper for a new and different sweet potato recipe 🙂
