Nana's Meatloaf

Nana’s Meatloaf

Ingredients
 

  • 2 pounds ground beef
  • 1 envelope dry onion soup mix
  • 2 large eggs - beaten
  • 1 cup fresh breadcrumbs (more if it’s too moist, Nana never measured. She usually used crumbled up sandwich bread)
  • 2 tbsp water
  • 1 1/2 cups ketchup - divided
  • 2 tsp dried parsley
  • 1 can (3 ounce) french fried onions

Instructions
 

  • Preheat oven to 350 degrees.
  • In a large bowl, combine the ground beef, dry soup mix, eggs, 1/2 cup ketchup, water and bread crumbs.
  • Place mixture into a 9″x 13″ pan that’s been sprayed with cooking spray and form into a large loaf.
  • Spread remaining ketchup over meatloaf.
  • Sprinkle with parsley.
  • Bake for 45 to 55 minutes.
  • Top with French fried onions.
  • Bake another10 to 20 minutes.
