Nana’s Meatloaf

Ingredients
- 2 pounds ground beef
- 1 envelope dry onion soup mix
- 2 large eggs - beaten
- 1 cup fresh breadcrumbs (more if it’s too moist, Nana never measured. She usually used crumbled up sandwich bread)
- 2 tbsp water
- 1 1/2 cups ketchup - divided
- 2 tsp dried parsley
- 1 can (3 ounce) french fried onions
Instructions
- Preheat oven to 350 degrees.
- In a large bowl, combine the ground beef, dry soup mix, eggs, 1/2 cup ketchup, water and bread crumbs.
- Place mixture into a 9″x 13″ pan that’s been sprayed with cooking spray and form into a large loaf.
- Spread remaining ketchup over meatloaf.
- Sprinkle with parsley.
- Bake for 45 to 55 minutes.
- Top with French fried onions.
- Bake another10 to 20 minutes.
