Root Beer Float Cupcakes

Root Beer Float Cupcakes

Cook Time 20 minutes
Servings 24 cupcakes

Ingredients
 

  • 1 box (18.25 ounces) white cake mix
  • 1 1/4 cups root beer
  • 2 eggs
  • 1/4 cup vegetable oil
  • 24 root beer barrel candies
  • 8 straws - cut in thirds

Frosting:

  • 4 packets (1.3 ounces each) Dream Whip whipped topping
  • 2 cups chilled root beer

Instructions
 

  • In a mixing bowl, combine the first four ingredients.
  • Beat on low speed for 30 seconds.
  • Beat on high for 2 minutes.
  • Line muffin tins with cupcake liners.
  • Fill cups about two-thirds of the way full.
  • Bake cupcakes in a preheated 350 degree oven for 15 to 20 minutes or until a toothpick inserted comes out clean.
  • Cool completely.
  • Use a piping bag to frost cupcakes.
  • Top each cupcake with a straw and a piece of candy.
  • Makes 24 cupcakes. You can make up to 24 hours ahead.
  • Keep frosted cupcakes in the fridge until ready to serve.
  • Don’t add candy and straws until right before serving.

For Frosting:

  • In another bowl, beat frosting ingredients until stiff peaks form.

Notes

If you are using a piping bag to frost cupcakes I suggest you double the frosting recipe to 8 packets dry whipped topping and 4 cups cold root beer.

    Yes, I have made this in a 9 x 13 pan and it works. If you use cool whip don’t add regular root beer. You could add a few drops of root beer flavored extract. -Amy

  4. Hi Joan. I use Dream Whip. It’s the dry packet of whip topping. Comes in a box. Also cold root beer. I’ve been this many times and it whips up perfectly. -Amy

  5. Just the Whip It and root beer are suppose to make a frosting??? After 5 minutes on high I still had liquid.

    They were so easy to make and tasted great. I used a piping bag to ice so I took your tip to double the recipe but I had a lot leftover. So I froze it and am gonna use it over root beer for kinda a real root beer float. Thank you so much.

  8. Delicious is right!!!! Fun, cool, light cup cakes and toppings yumm. My only concern is the topping was very expensive 2 pck of dream whip was $2.58 at Walmart. That could be $5.00 to $10.00 if u double the topping . No complaints. We tried an alternative bought the ready made Topping added some root beer and melted the candy added powdered sugar used a press with different top designs. Did this last night the topping is still holding up Amazing.
    Saw u on channel 6 new Milwaukee a week a go or so.

  10. I saw you on WKYC last week and can’t wait to make these. Since the frosting is made with Dream Whip can I make them the night before and do they need to be refrigerated? I was concerned about the frosting holding up. Thank you!

    Very moist tender cake and you can really taste the root beer in the icing.They were nice and light not too sweet or rich.Made them a birthday party and they went over well.They looked very cute as well.
