Red Velvet Cookies

These bright red cookies are perfect for Christmas or Valentine’s Day.

Ingredients:
1 box (15.25 ounces) red velvet cake mix
2 tablespoons all-purpose flour
2 large eggs
1/2 cup vegetable or canola oil
1 1/2 cups white chocolate chips

Directions:
Preheat oven to 350 degrees. To make cookies, in a large bowl combine cake mix and flour. Whisk until clumps disappear. Add eggs and oil. Use an electric mixer and beat until all combined. Batter will be thick and sticky. Use a small cookie scoop to scoop dough onto a baking sheet, leaving room for cookies to spread. For a flatter cookie, spray the bottom of a glass or small bowl with cooking spray. Slightly press down each ball of dough. Spray back of glass as needed until all dough is flattened. Bake 8 to 12 minutes until cookies just start to crackle. Remove from oven and let cool. Carefully melt the white chocolate chips in a microwave safe bowl or over a double-boiler. Place melted chocolate in a Ziploc bag. Make a very small cut in one corner. Drizzle the white chocolate over the cooled cookies. Let the cookies set until the chocolate hardens.

Notes:
I love to give gifts in a jar! Just mix together the dry cake mix and flour. Use a funnel or scoop to place in a large clean jar. Pour white chocolate chips on top. Screw on lid and label Red Velvet Cookies. Put these directions on the back of the label:
