Oatmeal Cherry Cookies

Ingredients:
2 sticks butter, softened at room temperature
1 cup firmly packed brown sugar
1/2 cup granulated sugar

2 large eggs
1 teaspoon vanilla extract

1 1/2 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
2 teaspoons cinnamon

3 cups old-fashioned oatmeal, uncooked
1 cup dried cherries

Directions:
Preheat oven to 350 degrees.
Cream butter with sugars and beat until well blended. Add eggs and vanilla, beat for several minutes until light and fluffy. Mix together flour, salt, baking soda, and cinnamon. Add them to the butter mixture and beat until well blended. Stir in oatmeal and cherries. Drop batter by tablespoons onto un-greased or parchment lined cookie sheets. Bake until edges just turn golden, about 10 to 12 minutes. Let cookies cool in the pan for a minute or two, then remove them to racks to cool.

    I love this recipe. Your ingredients & measurements are easy & I love that. My husband isn’t a fan of dried fruit so I substituted a cup of toasted chopped walnuts. They turned out great & I’m taking 1/2 of them to a neighbor who’s recovering from surgery. Thanks so much!

    Looks and sounds delicious, not to mention it’s made from oatmeal. I think blueberries are a good alternative, too.
