Crazy Good Carrot Cake

Servings 8

Ingredients
 

  • 2 cups flour
  • 2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1 1/2 cups sugar
  • 1 cup oil
  • 3 eggs
  • 2 teaspoons vanilla
  • 3 cups shredded carrots

Cream Cheese Frosting:

  • 8 ounces cream cheese - softened
  • 1 stick or 8 tablespoons unsalted butter - softened
  • 1 pound powdered sugar
  • 2 teaspoons vanilla

Instructions
 

  • In a large bowl, whisk together the first 5 ingredients.
  • Add remaining cake ingredients.
  • Mix until well combined.
  • Spoon into two 8 inch greased cake pans.
  • Bake 350 degrees for 30 minutes or until toothpick comes out cleans.
  • Cool. Meanwhile beat together all frosting ingredients for about 5 minutes until light and fluffy.
  • Once cake is cooled, frost.

Notes

For more layers you can cut the 2 rounds of cooled cake in half to make a 4 layer cake.
