Banana Bread with Banana Frosting
2 eggs, beaten
1/3 cup buttermilk
1/2 cup vegetable oil
3 very ripe bananas, mashed
1 1/2 cups white sugar
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup chopped walnuts (optional)
Preheat oven to 325 degrees F (165 degrees C). Spray one 9×5 inch loaf pan with non-stick spray coating. Blend together the eggs, buttermilk, oil and bananas. Sift together the sugar, flour, baking soda and salt. Add to banana mixture and mix well. Fold in walnuts if using. Spoon into a 9 x 5 inch loaf pan that has been sprayed with cooking spray. Bake 1 hour and 10 to 15 minutes or until a toothpick inserted in the center comes out clean. Invert onto a plate. Let cool and frost with Banana Cream Cheese Frosting if desired.
If you are frosting the loaf, make sure to keep it refrigerated. Take it out about an hour before serving and let it sit at room temperature so the frosting softens up a bit. You can decorate the top of the loaf with a few banana slices right before slicing if you like.
Banana Cream Cheese Frosting Ingredients:
4 ounces cream cheese, softened
4 tablespoons butter, softened
1/2 of a very ripe banana, well mashed
1/4 teaspoon vanilla
2 to 3 cups powdered sugar
Use a mixer to beat together butter and cream until smooth. Mix in vanilla. Gradually add in 1 1/2 cups powdered sugar. Beat until smooth. Add mashed banana and mix in. Add more powdered sugar if needed until the frosting is nice and smooth and the desired consistency. Spread on top of cooled bread.
