Banana Bars with Cream Cheese Frosting

2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter, softened
1 1/2 cups sugar
2 eggs
1 cup sour cream
1 teaspoon vanilla extract
1 cup mashed ripe bananas (approx 3 bananas)

For the Cream Cheese Frosting:
8-ounce package cream cheese, softened
1 stick butter, softened
2 cups sifted confectioners’ sugar
1 teaspoon vanilla extract

Preheat oven to 350F. Spray the bottom and sides of a 9×13 inch baking pan with pan release baking spray. In a large bowl whisk together the flour, baking soda, and salt; set aside. Use a mixer to beat the butter and sugar on medium speed until light and fluffy, about 3 minutes. Beat in the eggs, one at a time, then stir in the sour cream and vanilla. Add flour mixture and mix until just combined. Fold in the mashed banana. Transfer the batter to the prepared pan. Bake 22-25 minutes. or until toothpick inserted into the center comes out with just a few moist crumbs attached. Let cool.

To make the cream cheese frosting combine the cream cheese and butter and use a mixer to beat until smooth. Add the sugar and mix at low speed until combined. Stir in the vanilla and mix again. Spread on cooled banana bars.

    I made these for an Easter dessert, the entire bar pan was gobbled up!
