Loaded Potato Casserole

8 large potatoes, peeled and cubed
1 cup sour cream
1 block (8 ounces) cream cheese, softened
1 packet (1 ounce) dry ranch dressing mix
1/2 cup milk
2 to 3 cups shredded cheese
½ pound bacon, cooked and crumbled
4 chopped scallions

Boil potatoes until fork tender and drain. In a big bowl, use a mixer to mash potatoes with sour cream, cream cheese, ranch dressing and milk. Spoon mixture into a casserole dish that has been sprayed with cooking spray. Cover loosely with foil and bake in a preheated 350 degree oven for 30 to 40 minutes. Uncover and sprinkle cheese and then bacon on top. Bake another 5 to 10 minutes or until heated through and cheese is melted. Top with scallions right before serving.
