Ingredients:
1 medium head cauliflower, trimmed and cut into florets or 1 bag (20 ounces) frozen cauliflower
3 cups shredded cheddar cheese, divided
1 can (10 3/4 ounce) cream of chicken soup
1/2 cup milk
1 cup sour cream
1 cup crushed butter crackers
3 tablespoons melted butter

Directions:
Boil cauliflower in water for 4 to 5 minutes. Drain. In a large bowl whisk together soup, sour cream, and milk. Stir in 1 ½ cups cheese, cauliflower and a pinch of salt and pepper. Spoon into a casserole dish that has been sprayed with cooking spray. In a bowl mix together butter and crackers. Sprinkle remaining 1 ½ cups of cheese on top and then cracker mixture. Bake in a preheated 350° oven for 25 to 30 minutes or until bubbly and golden on top.
