Wake Up Breakfast Casserole

Wake Up Breakfast Casserole

Prep Time 15 minutes
Cook Time 45 minutes
Servings 6

Ingredients
 

  • 8 frozen hash brown patties - slightly thawed
  • 3 cups shredded cheddar cheese
  • 1 to 2 cups diced ham or cooked and crumbled bacon or sausage
  • 7 eggs
  • 1 cup milk
  • ½ teaspoon salt
  • ½ teaspoon ground mustard

Instructions
 

  • Place hash brown patties in a single layer in a greased 9 x 13 inch baking dish.
  • Sprinkle ham, bacon, or sausage, then cheese over the top of the hash brown patties.
  • In a bowl, beat eggs, milk, salt and mustard.
  • Pour over ham and cheese.
  • Cover with foil and bake at 350 degrees for 45 minutes to an hour or until eggs are set.
  • Let rest a few minutes and then cut into squares and serve.

    Just wanted to let your readers know that you can use egg beaters in place of the eggs and it tastes great. Had to bake it a little longer but everyone enjoyed!

  2. SORRY AMY BUT DOES THE CHEESE GO ON TIP OF THE HASBROWN OR DOES HAM GO ON TOP OF POTATOES AS RECIPE MAYBE I DIDNT DO RIGHT PLEASE LET ME KNOW THANKS PAT

    1. Hi Pat. You layer the hasshbowns down first. You can season them a bit with seasoning salt or garlic salt if you like to kick up the flavor. Next, goes your choice of meat, and then on top of the meat goes the cheese. The egg mixture then gets poured over the top. Again, you can use more salt and pepper in the egg mixture if you want to kick up the flavor. Hope that helps! Thanks! -Amy

  3. ANT NOW IM CONFUSED JSUT READING THE RECIPE AGAIN AND IT SOUNDS LIKE YOU PUT THE HAM ON TOP OF THE HASH BORWNS IN THE FIRST SENTENCE THEN AT END IT SAYS CHEESE ON TOP THEN BAKE
    SO THINK I DID IT WRONG COULD YOU LET ME KNPW HOW TO DO THANKS PAT

    I thought this was an excellent choice for the cabin. I could make a couple of pans when we have a crowd. I wouldn’t have to stand over the stove cooking forever!! I could enjoy more time visiting. 🙂
