Sausage and Veggie FrittataIngredients:
1 tablespoon olive oil
1/4 of a red onion, sliced
2 pre-cooked chicken and cheese sausages, sliced into ¼ inch pieces
1/2of a red pepper, diced
1 cup diced zucchini
4 eggs, beaten
1/4 cup crumbled feta cheese
1/4 cup seeded and diced tomatoes
1 cup fresh spinach, chopped

Heat olive oil in a medium size nonstick ovenproof skillet. Cook onion in the oil for a couple minutes. Add the sausage, red pepper and zucchini and cook another minute or two. In a bowl whisk together the eggs and feta cheese. Pour egg mixture into the skillet. Gently mix eggs together with sausage and veggies. Sprinkle the tomatoes and spinach over the top and cook for a minute until eggs start to set a bit. Place skillet in a preheated 375 degree oven for 10-12 minutes or until it puffs up and the edges get golden. Remove from the pan and cut in wedges like a pizza to serve. Note: If your skillet has a rubber or plastic handle, wrap it in aluminum foil before putting in the oven.
