Microwave Blueberry Mug Muffins


Ingredients:
Cooking Spray
2 tablespoons whole wheat flour
¼ teaspoon baking powder
½ teaspoon cinnamon
1/4 teaspoon golden flax seed
1 teaspoon brown sugar
½ teaspoon canola oil
2 tablespoons skim milk
2 teaspoons unsweetened applesauce
Small handful fresh blueberries

Directions:
Spray a microwavable coffee mug with cooking spray. Add flour, baking powder, cinnamon, and flax seed to the mug and stir.

In another coffee mug or small bowl mix together brown sugar, oil, milk, and applesauce. Pour wet ingredients into dry, and mix. Gently mix in blueberries.

Microwave mug on MEDIUM power for 2 minutes or until a toothpick inserted near middle comes out clean. Carefully remove hot mug from microwave and loosen edges with a knife. Turn mug upside down and slide muffin out on to a plate. Let cool a bit but, best if eaten warm!

    sounds really good. I like the single serving it helps me only eat a single serving.
