Mediterranean Breakfast Pizza

Mediterranean Breakfast Pizza

Ingredients
 

  • 1 whole wheat flatbread or pita
  • 1 tablespoon low-fat cream cheese
  • 1 tsp. garlic
  • A handful of fresh baby spinach
  • 3 thin slices of tomato
  • 1 egg
  • Salt and pepper
  • Paper towel

Instructions
 

  • Spread one side of the pita with cream cheese.
  • Put a pita paper towel and then on a microwave-safe plate.
  • Place a handful of spinach on top.
  • Top spinach with tomato slices and garlic.
  • Crack an egg in the center.
  • Season with a pinch of salt and pepper.
  • Microwave on high for 1:30 to 2:00 minutes, depending on how you like your egg cooked.

Notes

If using a pocket pita, make a slight cut through halfway horizontally.

  1. I always prick the yolk of the egg before microwaving. Just use a toothpick and the yolk won’t spill out. Keeps the egg from exploding!

  2. My daughter of 14 yrs is so excited about this she is calling her friends. We went shopping for ingred. Made it. It is simply delicious! Easy. Added fresh basil to top of tomato and it’s is yummo!! Thanks for the great recipe. Ps I hate vegetables.

  3. I’ve made this several times since seeing you make it on Dr Oz and I absolutely LOVE IT!!! It’s my very favorite breakfast now. However, I do have to break the egg to get it to cook right and I also need to microwave it longer. Difference in microwave maybe. No matter, it’s worth the wait!

  4. I tried this pizza today it was great. The only thing I change was cooking egg on stove. I just didn’t like the way egg looked after coming out microwave.
