Apple Pie Breakfast Bulgar

Apple Pie Breakfast Bulgar

Ingredients
 

  • ¼ cup bulgur
  • ½ cup diced apple
  • ½ teaspoon vanilla
  • 1 cup water
  • 2 tablespoons greek or vanilla yogurt
  • 1/2 teaspoon cinnamon
  • 1 tablespoon walnuts - optional

Instructions
 

  • Pour water over the bulgur in a microwave-safe bowl and let soak a bit.
  • Mix in apples and vanilla.
  • Place a paper towel over the bowl.
  • Microwave on high for 5 minutes.
  • Serve with yogurt, cinnamon, and walnuts on top.

Notes

Bulgur has double the fiber as oatmeal!

  1. I have never had bulgar before; I found this hard to swallow. I put more cinnamon and vanilla and I still don’t have any connection to apple pie. I also used the Greek yogurt and walnuts.

    i tried making this and i messed up -___-
    haha i saw this on doctor oz and i really wanna try it, how long do i let the bulgar soak ? is overnight too much ? Also do i have to drain it all before putting it in the microwave ? thanks ! this breakfast idea sounds so yummy, only if i could just get it right (x

    1. Hi Gabrielle. First of all use quick-cooking bulgur. Soak it for about 10 minutes. Don’t drain the water. Then add apples and vanilla. Stir. Cover bowl and heat in the microwave for 5 minutes. Add toppings if you like. Hope that helps! -Amy
