Stuffed Shrimp

12 jumbo shrimp or prawns, peeled and deveined leaving tails on
1 pound imitation crab
1 tablespoon minced garlic
2 tablespoons chopped tarragon
3 tablespoons lemon juice
4 ounces chopped mushrooms
½ cup grated Parmesan cheese

Butterfly shrimp. In a bowl, mix together crab, garlic, lemon juice, tarragon, and mushrooms. Mix in half of the Parmesan cheese. Place shrimp in a baking dish. Fill each shrimp with about 2 tablespoons stuffing. Top each shrimp with the remaining Parmesan cheese. Bake in a preheated 350 degree oven for 10 to 15 minutes until shrimp is cooked through.
