Ingredients:
6 cups zucchini peeled, cored and chunky sliced
2 tablespoons fresh squeezed lemon juice
1 1/4 cups sugar
2 teaspoons apple pie spice or cinnamon
2 tablespons minute tapioca or flour
1 9-inch unbaked pastry pie shell
Streusel Topping:
1/2 cup brown sugar
1 cup flour
1/2 cup butter
Directions:
In a large saucepan combine zucchini with lemon juice, sugar and apple pie spice. Simmer over medium heat until zucchini is fork tender, about 15 minutes. Remove from heat and add tapioca or flour. Pour into prepared unbaked pie shell. In a bowl combine brown sugar and flour and cut in butter until crumbly. Sprinkle with streusel topping over the filling. Bake in a preheated 350 degree oven for about 30 to 45 minutes or until bubbly and golden on top. Great served warm with vanilla ice cream!
