Jammin’ Chicken and Sausage Jambalaya

Chicken and Sausage JambalayaIngredients:
2 tablespoons olive oil
2 boneless skinless chicken breasts, cut into bite-size pieces
1 pound smoked sausage, diced
1 medium yellow onion, diced
1 green bell pepper, diced
1 cup diced celery
3 garlic cloves, chopped
1 tablespoon Cajun seasoning
2 cups uncooked white rice
4 cups chicken stock
2 bay leaves
2 teaspoons Worcestershire sauce
A few dashes hot pepper sauce
A few chopped scallions

Directions:
Heat oil in a large pot over medium high heat. Sautee chicken for a few minutes. Add sausage and continue to cook until lightly browned. Stir in onion, bell pepper and celery. Cook for a few minutes. Add garlic and cook another 30 seconds. Season with Cajun seasoning. Add rice, then stir in chicken stock, Worcestershire sauce and bay leaves. Bring to a boil, then reduce heat, cover, and simmer 20 minutes, or until rice is tender. Stir in hot pepper sauce. Serve with scallions on top and with extra hot sauce for those who want it more spicy.
