4 baking potatoes
A few thin slices onion (optional)
1 tablespoon fresh chopped chives or scallions
4 tablespoons butter, melted
Salt and pepper
1/4 teaspoon garlic powder
1/2 teaspoon dried dill weed
Heat the grill to medium high heat. Make slices 1/2 inch apart in the potatoes, cutting three quarters of the way through the potatoes and leaving the bottoms intact. Carefully fan the potato slices apart. Place each potato on a piece of aluminum foil big enough to fold completely around the potato. Fill each slice in the potato with onion slices. Sprinkle the potatoes evenly with salt, pepper, garlic powder, chives or scallions and dill. Drizzle melted butter over the top. Wrap the potatoes up in the foil and seal the foil tightly. Place the potatoes on the grill and cover the grill. Cook for 35 to 40 minutes or until tender.
