Have you been to the Farmer’s market lately? It’s filled with all of my summer favorites right now! The tomatoes are glorious! The sweet corn is fantastic! Green beans too! This week I’m travelling around the Midwest cooking up some brand new recipes on TV inspired by the great things you can pick up at the Farmer’s market and road side stands. They loved my fresh Southwest Corn and Black Bean Salad in Milwaukee! Check it out! It’s so easy to make! It goes so great with my 3 ingredient Margarita Chicken and my spicy Chipotle-Lime Pork Chops too! With the football season underway, serve it with baked tortilla chips and it makes a delicious guilt-free dip too! Go ahead! Have another one!
Speaking of fun appetizer! My fresh Tomato, Mozzarella, and Basil Kabobs are perfect for the big game or a girlfriend’s get together. I drizzle them with a balsamic herb and olive oil vinaigrette or you can serve them with my homemade Lemon Pesto Sauce. They are just so darn cute! Fun to make too! Have the kids help!
Really want to “WOW” everybody at the picnic or potluck? My Farmer’s Market Green Bean, Corn and Tomato Salad will do it! It’s so gorgeous. No mayo either! Just a nice ‘n lite lemon basil dressing!
